75. Mr. DUNCAN MILLAR

asked what arrangements have been completed for providing potato flour for baking purposes; and whether it is proposed to set up special plant for this purpose?

Mr. CLYNES

The Food Controller has ordered the whole of the machinery required for the manufacture of potato flour in the United Kingdom, and arrangements are being made to instal this machinery at suitable places in the potato districts as soon as it has been completed.

Mr. MILLAR

Would it not be much more economical to provide potatoes in the form of mash for baking purposes rather than in the form of flour or is it proposed to set up a large plant?

Mr. CLYNES

Opinions on that point vary very much even when drawn from expert sources, and my advice is that the Department is doing all it can to provide machinery for this purpose.
