§ Sir B. SmithApproximately 15 per cent. of the flour being used in this country is imported flour. The bulk of this is Canadian flour of which the extrac- 613 tion from wheat is about 75 per cent. Occasionally other imported flours are used and in these cases the extraction varies between 70 and 75 per cent.
