asked the Parliamentary Secretary to the Ministry of Food if he will state what investigations have been made by his Department into the methods of leavening bread without bread yeast; whether any such methods are more economical of flour than the use of bread yeast; and whether any investigations have also been made into the possibility of making bread yeast otherwise than as a by-product of processes which consume foodstuffs in the manufacture of alcohol?

Investigations are being conducted as to the best method of economising yeast in the making of bread and also into the possibility of obtaining effective substitutes for yeast. I am not yet in a position to state the result of these investigations. The possibility of making yeast otherwise than as a by-product of processes which consume foodstuffs in the manufacture of alcohol forms part of this investigation. These problems are by no means free from difficulty.
