HC Deb 04 June 1946 vol 423 c318W
Sir I. Fraser

asked the Minister of Food what changes have been made in the composition of the present loaf of bread; and how far these have affected the efficiency with which it can be cut into slices.

Mr. Strachey

No recent changes have been made in the permitted ingredients in National bread. The substances which may be included in National bread remain therefore those prescribed in the first schedule to the Bread (Control and Maximum Prices) (No. 2) Order, 1943 (S.R. & O. 1943 No. 1653). The raising of the extraction rate of flour from wheat to 90 per cent. has resulted in the production of bread of different characteristics from that baked from 85 per cent. flour, but I am advised that there should be no serious difficulty in regard to slicing.
