§ Mr. RossThe percentages of the United Kingdom production of home fed beef, pigmeat and mutton that are produced in Scotland vary slightly from year to year but in the past few years have been about 16 per cent., 6 per cent. and 23 per cent., respectively.
Because of the various uses to which the same pig carcase may be put it is not possible to give comparable figures for pork and bacon separately. The production of bacon and ham in Scotland, including some from imported carcases, has been rising in recent years and in 1966 amounted to 8½ per cent. of United Kingdom production, but there is also a substantial trade in Scottish fat pigs to bacon factories in England and Wales.
