asked the Secretary of State for Employment what number and percentage of staff in the catering industry who were found by the Wages Inspectorate to have been underpaid have subsequently received their entitlement; and how much money was involved.

In 1983, the pay of 81,615 workers covered by the three wages councils for the hotel and catering trade was checked; 8,630 or 10.6 per cent. were found to have been underpaid, and 6,905 or 80 per cent. received arrears of pay amounting to £831,018.
