§ Mr. John PattenThe maintenance of standards in particular kitchens is the responsibility of individual health authorities and we expect them to comply with the relevant food hygiene regulations and to allow environmental health officers open access to catering departments and566W food handling areas in their premises. Recommendations by these officers should be considered immediately within authorities to decide what action is needed.
