Present estimates are that over the year as a whole about 10 per cent.—15 per cent. of all poultry is sold in this form with a concentration of sales of turkeys and capons at the Christmas period. Estimates made in 1972–73 indicated about 20 per cent. of poultry was marketed in this form.
