asked the Minister of Food whether he is aware that sausages and similar alternatives to rationed meats are extremely variable in their proportion of offal to bread and that there is considerable resentment by working-class purchasers at the apparent increased percentage of bread in sausages since rationing began; that some butchers take advantage of the incidence of rationing by preserving an apparently fair price but decreasing the quality of sausages; and whether he will take steps to secure a guarantee of quality and a statement by butchers of the proportion of offal and meat in sausages and similar foodstuffs offered for sale?

I am aware of the variable meat content of sausages at the present time and that since the introduction of meat and livestock control some decrease has occurred in their meat content. The question of the best means of controlling the price and meat content of sausages and similar meat products is one of some complexity, and is engaging the close attention of my Department. I am very hopeful that a satisfactory solution may shortly be found.
