§ Mr. McCURDYUnder the present system of meat control no fixed percentage of profit is guaranteed to the retailer. Retail butchers buy meat at maximum prices and sell it at prices in accordance with the schedule of maximum retail prices for the time being in force. The amount of profit made depends on the capacity of the butcher, and upon the public demand for supplies. I may say, however, that tests which have recently been made show that the average gross profit to the retailer is approximately 17 per cent. on the cost of the meat.
