asked the Parliamentary Secretary to the Ministry of Food whether, in view of the reported approaching failure of the potato supply, he will indicate and make public in good time what suitable substitutes there are available and how they should be prepared in order to take the place of potatoes?

Captain BATHURST

The principal substitutes for potatoes, so far as they are available under existing conditions, would appear to be:

  1. (1) Roots, such as parsnips, artichokes, swedes, turnips and carrots; (2) rice; (3) barley meal, bread; (4) oatmeal porridge and oatcakes; and (5) maize, and cailze meal in their various forms.

A cookery book is being published at a low price under the auspices of the Ministry of Food, and it is hoped that this will contain adequate directions for the preparation of these various articles.
