During 1991, environmental health officers brought 1,143 prosecutions in connection with hygiene and microbiological contamination. In addition, there were 691 prosecutions relating to chemical contamination and extraneous matter, some of which related to food safety and some to quality. The available information does not show whether cases were successful or contested.
