To ask the Secretary of State for Health what has been the total number and percentage of successful prosecutions for breaches of the food hygiene regulations in the hotel and catering industry in each year since 1980.

The information requested is not held centrally. The following illustrative figures are taken from the annual reports of the Institution of Environmental Health Officers (IEHO). They are based on responses by local authorities to an annual questionnaire from the institution. Response rates vary and figures cannot therefore be compared year on year; they relate to all food premises.
