asked the Minister of Food if he is aware of the growing practice adopted by hoteliers and restaurateurs of making a 10 per cent., 15 per cent. or 20 per cent. service charge on customers' bills, whereas this money is often kept by the managements in order to assist them in avoiding food regulations; and what action he proposes to take to obviate this.

Caterers are allowed to make a service charge of up to 10 per cent. of the bill and may dispose of the money as they wish. If my hon. Friend will send me the name of any establishment making a higher service charge, I shall be glad to have the matter investigated.
